Interestingly, the University of Arizona "Critical Languages"
series has a CD course for both Mandarin and Cantonese. Also,
it seems they created the Cantonese course and then created their
Mandarin course using the same exact dialogs but with different
romanization and speech.
I hope that Rocket Languages will consider a Cantonese course that is the current Rocket Chinese course with Cantonese speech and romanization. I think the Hanzi does not have to change and most of the grammar and writing lessons would also, largely, be the same.
