I am having some trouble differentiating the beginning sound, It sounds like a "K" sound in English like phonetically "Khwying" is this right or is it more of a hard H sound?

It is pronounced "HWAN-yiNG", starting with a HWA sound where the A is like that in swan.

I think what you are hearing is a regional (northern) dialect. I learned it without the 'R' sound. I think kěshì is pronounce 'kooSHee', where the oo is that of cook.

I believe the standard CCTV pronunciation of 十 (shí) is shi without the R (and 'i' between it and she). I believe 'shur' is a regional/northern affectation.
