WHY SHOULD IT BE 'UNE TARTE AUX POMMES' (WHY AUX) AND NOT 'DES' ?

It's really tricky! Let's restrict this just to food. My understanding is that you use "des" when talking about an ingredient that cannot be pulled out of the disk "soupe des ognions". But if you can withdraw the item and it is still a, like, sandwich, then you use aux: "sandwiche aux fromage", omelet au fromage.
