I noticed that at the doctors, Eric was asked to go to the waiting room, Veuillez passer dans la salle d'attente. Why is veuillez used instead of vouliez?

Salut, that is a very good question. When "vouloir" (want) in in the Imperatif form it becomes "veuillez". The receptionist at the doctor's is asking Eric to wait in the waiting room. It is not an order as such and in English this might even sound rude, but here you can understand it as a suggestion or recommendation. I hope that helps.
