I'm confused about me versus yo. I understand that "Yo gusto" is I like; but then why is Me gustaria "I would like?" Why not "Yo gustaria?"

To use "Yo gusto" as you describe is falsly taking the English adaption of the Spanish term which literally speaking actually means means "to please". Therefore when you say "Me gusta el chocolate" you are literally saying "chocolate pleases me". Me gustaria means "it would please me". I think you can therefore see that "I" (Yo) would not be correct to use with Gustar.
