I understand you can use these two words when referring to “service”. Are they interchangeable or should one of them be used in a specific situation?

Hallo RexV,
Service and Dienst are not interchangeable in German.
Service is used if you speak of customer service (Kundenservice) or service in a restaurant, e.g. Der Service (as in: the waitress) im Restaurant war super. (The service in the restaurant was excellent.)
Dienst, on the other hand, is used as in military service (Militärdienst) or service at church (Gottesdienst).

Is the word "Bedienung" interchangeable with "Service" and is the word more common?

Yes, Bedienung and Service are interchangeable. Service is a bit more "modern" than Bedienung, but both is quite common.
