"J'éspère que la cérémonie vous a plu" is correct. It remains 'vous a plu' because it is the ceremony that is 'doing the pleasing' and therefore is conjugated in the third person singular. And remember who is it (the ceremony) pleasing? Vous.
If we were to replace la cérémonie with 'elle' it may make it clearer: "J'éspère qu'elle vous a plu." - I hope you enjoyed it. (or literally: I hope it pleased you.)

I need to look and think a little further, I do have a problem at times with this concept, but it will become clearer the more I use it.
