The modern definition of giostra is a carousel with seats shaped like animals or inanimate objects. Children get a seat and can then have a ride while the carousel spins.
In the Medieval era, it was used to address tournaments where knights and other riders would fight on horseback. The English term joust sounds akin to giostra.
"Theme park" (with rollercoasters etc.) is usually translated as parco di divertimenti or luna park.
