I have been trying to figure out why with some verbs “gern” is used, and with other “gerne”. I can't make any sense of why one is used and not the other.

The short answer is that gern and gerne can be used interchangeably! You will often find that the final e gets dropped from some German words in colloquial speech but it can also depend on the region or simply personal preference.
