I have just seen this sentence “Komm doch bitte mal schnell her”, which means “Please come over here quickly”
When do we write “hier” as “her”?

This can be a tricky thing for non-native German speakers to notice: it isn't the word hier "here"at the end of the sentence because this isn't actually a preposition. In this situation, the full verb is herkommen "to come here"; what you're seeing at the end of the sentence is the separable prefix her, rather than a preposition meaning "here."
